Ah ha ... can't get good white bread in Japan? You'll have to make bread instead! For this recipe you need the pasty, spongy, factory-made white bread.
175g of mixed fruit. You can use raisins, or raisins and apricots, or whatever you fancy.
125g of brown sugar.
The zest of 2 lemons.
Two pints of milk (approx 1 litre).
4 eggs, lightly beaten.
Method:
1. Mix the milk and eggs together to make a custard. 2. Spread butter on one side of the slices of bread. 3. Halve the bread diagonally. 4. Now layer half of the bread slices, face down, on the bottom of the pan. Cover with half of the fruit, sugar and lemon zest. Place the rest of the bread slices on top, face up. Top with the rest of the fruit, sugar and lemon zest. 5. Pour over the custard. 6. (Important!) Leave to stand for at least one hour, so the custard soaks into the bread. You can also "baste" the custard over the bread from time to time. 7. Cook in a pre-heated oven at 180°C for around 45 minutes. The bread on top should be browning, the custard will be solid. 8. Eat it!!!
Hi, Richard, how are you? I enjoy reading your recipes very much. I got a quick question for you. Am I supposed to use fresh fruit or dried fruit, or does it not matter?
