G'day all, Recently, I don't cook so much. I often eat out or buy from a convenience store. I LOVE cooking, but I live alone and cooking for one person is.... mondokusai!
If I have time, I'll cook a big pot of curry or soup or something like that. Recently, I sometimes make tomato soup....
Some fresh tomatoes (about 5) About a cup of water 1 onion (roughly chopped) 1 medium sized potato (roughly chopped) 1 clove garlic Herbs (Whatever you like. I use Thyme or Rosemary) Tomato paste About 1 litre Tomato juice A couple handsful of pasta
This is more like a guide rather than a recipe. Boil the tomatoes for about half a minute until the skin splits, then cut the stems out with a sharp knife and peel them. Then boil the water and add the other ingredients (except pasta). Simmer, covered for about half an hour. Take out half the soup and blend it (In a blender) and return to the sausepan. This will thicken it a bit and still leave some of the chunky bits!
I serve it with some french bread (Baguette).. Sliced about 3cm, topped with Dijon mustard and some tangy cheese... baked in the oven or grilled for about 10min.
