[Cooking is the act of expressing the order of the universe on the table] "You should not serve or praise food without knowing the three truths of cooking," this is what is written in the Edo period "Yaozen Cookbook." The three truths are "how to cut, how to arrange, and the combination of colors," which is about the fusion of yin and yang. "Cooking is like food medicine; it is about carefully discerning the medicine and poison of food and planning the menu, and it is different from food processing." The Japanese cooking class with Mr. Ota Tsutomu at the beginning of this month was a very meaningful time with much to learn.
The day before yesterday, I saw off the homestay guest from Costa Rica who had also participated in Mr. Ota's cooking class, and since yesterday, I have had a mother and daughter from Fukuoka on a wellness stay and a learning-type homestay from Hyogo. Although it's called a wellness stay, these two don't have any physical ailments; the 12-year-old daughter wants to fulfill a certain wish.
Everyone enjoyed cooking dinner together, and afterwards, I gave a one-hour lecture upon request before heading to the hot springs.
A 12-year-old girl attends the Nakameguro class every month, traveling all the way from Fukuoka.
Her mother, who has been practicing macrobiotic about 20 years, also came along because her daughter wanted to attend.
The girl chose to bring her own lunch instead of school lunch.
Since attending the lecture in Nakameguro, she has learned the importance of chewing well, experienced how chewing well can make wishes come true, and chewed well again this time as she works towards her next dream Even when she ate food with additives on her school trip, she said, "I could taste the additives, so I chewed it well and it was no problem!"
A young life with a bright future ahead.
I always feel energized by her honest and lovely smile!
I'm so grateful to all of you, my graduates and reliable comrades, for allowing me to enjoy this nourishing lifestyle with you all, laughing together right up until the very last moment before I leave home for an extended period.
