Crunchy Top Lemon Cake
100grams margarine
175grams sugar
175grams flour
2 teaspoons baking powder
1 teaspoon baking soda
2 large eggs
4 Tablespoons milk
Grated rind of 1 lemon
For the crunchy topping
juice of 1 lemon
sugar
Measure all the ingredients in a large bowl and beat well.
Butter and flour the cake tin and put the mix in it.
Bake at 180 degrees for 40 minutes.
Make the topping by mixing the lemon juice and some sugar in a small bowl.
Pour over the cake while it is still hot.
Leave until cool and then serve.
