2 Trout – gutted and cleaned Fresh herbs for stuffing the fish – Fennel, Tarragon and Sorrel all work well Lemon Slices for stuffing the fish
-Potato Salad-
New Potatoes (a waxy variety such as Charlotte or Anja) – around 400g Olive Oil – 2 tablespoons. Lemon Juice – 1 Tablespoon Mint Leaves – a good handful.
To prepare the fish slash the skin on both sides, fill the stomach cavity with the herbs and lemon and season the fish well. To cook either place in a roasting tin, cover tightly with foil and place in an oven preheated to 220oc for 10-15 minutes or place on a barbeque and cook for around 7-10 minutes each side. If using a barbeque take care to moisten the fish skin with oil to avoid it sticking.
To prepare the salad wash the potatoes then cover with cold, well salted water and bring to the boil. Leave to simmer until tender, around 15-20 minutes. Drain and run under cold water until still warm but cool enough to handle. Cut larger potatoes into halves or quarters in place in a salad bowl. Sprinkle over lemon juice and olive oil, chop mint leaves and add to the potatoes. Season and serve, optionally grate over some salted ricotta.
